Located just south of Mexico, and on the Caribbean Sea, Belize is a 300-kilometre-long, 100-kilomtere wide strip of tropical paradise (above). And it’s breathtakingly beautiful, with lush jungles in the interior, a mangrove lined coastline with innumerable channels and inlets, and sandy atolls just offshore, dotting the azure waters. December to April is the dry season, with tropical temperatures every day (and night), making for a perfect angling getaway if you need a break from winter. (It’s also easy to get there, with WestJet recently adding direct flights from several Canadian cities.)
