Make the best fresh walleye dinner ever

There’s no question the highlight for me at this year’s Mid-Canada Boat Show was participating in the Generation Next Angler Celebrity Cook-Off, the brainchild of KingFisher Boats’ Andrew Klopak and Michelle Trudeau. Twice each day during the fourday show, two KingFisher and Alumacraft pro staffers went head-to-head, cooking up their favourite walleye recipes for a panel of judges. At the end of the four days of competition, the results were tabulated and I was shocked, flattered and totally humbled to win. My champion dish? A little something I call Mediterranean Walleye Supreme, accompanied with an amazing avocado and grapefruit salad with lime vinaigrette. Not only is this meal out of this world in terms of taste, it’s also healthy and nutritious to boot. And it’s simple to prepare. Serves 2
