This southern flounder was a surprise catch. Flounder (and spotted seatrout, another popular gamefish) are plentiful in the creeks, but rarely bite in the cooler season. This was my first chance to have a good, long look at a live flounder (or sole, as they’re called in the grocery store). Not only are they supremely weird looking, flounder have powerful jaws and wicked fangs. It was also delicious, and just about the easiest fish I’ve ever filleted.
