Guatemala: A tropical fishing paradise
It’s got friendly folks, perfect weather and so many sailfish you can even land ’em on a fly rod

#6 Dorado are almost as insane as sailfish, and great eating
Dorado, also known as mahi mahi when they arrive in markets and restaurants, are also an outstanding gamefish. And since they inhabit the same waters as the billfish, and are attracted to the same (or any) bait, we caught them every day, including one big girl that took my friend Phil Shook some 20 minutes to land on light spinning tackle (above).
And then the crew made it for lunch (above). It’s hard to believe the kind of amazing lunches the mates whipped up, using just an electric frying pan in our boat’s diminutive galley. Much like our beloved Canadian shorelunches, this little comida de barco was better than any fish I’ve ever eaten in a restaurant anywhere in North America.
