As you might expect from a place that’s a blend of so many rich cultural traditions, Belizean cuisine is wonderful. It ranges from light to earthy, and from fiery to cool and refreshing. A few not-to-be missed dishes include Creole stewed chicken with rice-and-beans (above), chimole, Mayan caldo, Garifuna hudut and so much more.
